Pain Aux Raisins with a healthy joycified twist
Ingredients
- 3 cups all-purpose flour/bread flour 390g
- 3/4 cup of warm almond milk 180g
- 1/4 cup unsalted butter (softened) 57g
- 1 egg (at room temp)
- 32 g cane sugar
- 1 1/4 tsp salt
- 2 tsp instant yeast
- 50 g coconut sugar
- 57 g coconut oil
- 1/4 cup raisins (soaked in water)
Preparation
Sift and mix your dry ingredients in one bowl and the wet ones in another
Combine them in a large bowl
Whisk the mixture until you get a rough mass of dough
Use your knuckles for kneading the dough for 7 -9 mins (or until it turns soft and not too sticky)
Flatten the surface of the dough and cover the bowl
Let the dough rest for 5 mins
Divide & shape the dough
Roll your dough into a rectangle 17x15” or 18x15” with 1/4 thickness
Smear some oil and sprinkling raisins & sugar evenly across the dough sheet
Start rolling the dough into a long cylinder 17-18” in length
Now, divide the pain aux raisins into 12 equal pieces
Place them into a well-greased/lined baking tray
Cover the tray with a plastic film
Proof the pain aux raisins
Let the pain aux raisins proof for an hour (or until they rise nicely)
Bake for 18-20 mins at 350®f
Cover the top with aluminum foil to prevent your baked goods from browning
