Pesto Potato Bites


  • 12 small potatoes
  • 4 handfuls of fresh basil
  • 1/4 cup of chopped walnuts
  • 2 tbs of olive oil
  • 1/2 tsp of minced garlic
  • 1/4 apple cider vinegar
  • 1/4 tsp of pink himalayan salt
  • 1/4 of fresh cracked pepper


  1. In a medium sized pot bring water to a boil and add potatoes, add a pinch of salt and cover for 15 minutes

  2. Preheat oven to 400°, combine remaing ingredients into a food processor or mortar and pestle, blend until smooth

  3. Once potatoes are done or fork tender drain water from pot

  4. Place potatoes onto a baking sheet and smash with a fork both ways, then place in oven for 10 minutes

  5. Remove from oven and top with pesto, garnish with fresh cracked black pepper, pinch of salt, fresh basil, lemon zest, and enjoy???? #threebunnies
