Roasted Cauliflower with Tahini Sauce

Ingredients

  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Sea salt to taste
  • 3 tablespoons tahini
  • 3 tablespoons yogurt
  • 1/3 cup water
  • 1 lemon
  • Parsley for garnish

Preparation

  1. Preheat the oven to 400 degrees.

  2. In a large bowl, combine cauliflower florets, 2 tablespoons olive oil, 1 teaspoon cumin, and sea salt.

  3. Place on a sheet pan and bake for 45 minutes or until cauliflower is crispy.

  4. Meanwhile, prepare the sauce by combining tahini, yogurt, water, lemon, and sea salt, and whisk until creamy.

  5. To serve, add tahini sauce to a large plate, place the cauliflower on top, and garnish with parsley.
