Spice Sweet Potato Breakfast Cake
Ingredients
- 1/2 cup oat flour
- 1 tbs ground flaxseed
- 1/2 tbs coconut sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp five spice
- 1/4 cup applesauce
- 1/4 cup plant milk
- 1 tbs lemon/orange juice
- 1 tbs molasses
- 1 tbs tahini/nut butter
- 1/2 cup shredded and peeled sweet potato (as you would carrots)
- optional: walnuts, sultanas etc
Preparation
Preheat your oven to 180 degrees Celsius and line+grease a 1 lb small loaf tin
Whisk wet and dry ingredients separately and fold the wet into the dry in half amounts
Bake for 25-20 minutes until a toothpick emerges clean and let cool on a wire rack completely
