Spice Sweet Potato Breakfast Cake

Ingredients

  • 1/2 cup oat flour
  • 1 tbs ground flaxseed
  • 1/2 tbs coconut sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp five spice
  • 1/4 cup applesauce
  • 1/4 cup plant milk
  • 1 tbs lemon/orange juice
  • 1 tbs molasses
  • 1 tbs tahini/nut butter
  • 1/2 cup shredded and peeled sweet potato (as you would carrots)
  • optional: walnuts, sultanas etc

Preparation

  1. Preheat your oven to 180 degrees Celsius and line+grease a 1 lb small loaf tin

  2. Whisk wet and dry ingredients separately and fold the wet into the dry in half amounts

  3. Bake for 25-20 minutes until a toothpick emerges clean and let cool on a wire rack completely
