Spinach and Apple Oat Bars

Ingredients

  • Spinach and Apple Oat Bars
  • Unsalted butter (for the baking dish)
  • 2.5 cups whole rolled oats, separated
  • 1/2 teaspoon baking powder
  • 1 cup unsweetened applesauce
  • 3/4 unsweetened plain almond milk (or oat milk)
  • 1 egg, beaten
  • 3 tablespoons honey
  • 1/2 cup puréed spinach (about half of a 5oz container of fresh spinach)

Preparation

  1. Preheat oven to 350 degrees

  2. Coat a 9x9 inch pan with butter

  3. Blend one cup of the oats in a food processor until it looks like coarse flour, set aside in a bowl with the remaining 1.5 cups of whole oats

  4. To the oats add baking powder, apple sauce, almond milk, the beaten egg and honey. Stir to combine

  5. Blend spinach in a food processor until very finely chopped

  6. Then stir in the spinach to the oat mixture

  7. Add mixture to pan and place in oven for about 20-25 min until toothpick comes out clean and edges are slightly golden

  8. Let cool for a few minutes in the pan then slice into 16 squares or 32 small bars and let completely cool on a cookie rack. The result is a soft baked bar perfect for little eaters
