Spinach and Apple Oat Bars
Ingredients
- Spinach and Apple Oat Bars
- Unsalted butter (for the baking dish)
- 2.5 cups whole rolled oats, separated
- 1/2 teaspoon baking powder
- 1 cup unsweetened applesauce
- 3/4 unsweetened plain almond milk (or oat milk)
- 1 egg, beaten
- 3 tablespoons honey
- 1/2 cup puréed spinach (about half of a 5oz container of fresh spinach)
Preparation
Preheat oven to 350 degrees
Coat a 9x9 inch pan with butter
Blend one cup of the oats in a food processor until it looks like coarse flour, set aside in a bowl with the remaining 1.5 cups of whole oats
To the oats add baking powder, apple sauce, almond milk, the beaten egg and honey. Stir to combine
Blend spinach in a food processor until very finely chopped
Then stir in the spinach to the oat mixture
Add mixture to pan and place in oven for about 20-25 min until toothpick comes out clean and edges are slightly golden
Let cool for a few minutes in the pan then slice into 16 squares or 32 small bars and let completely cool on a cookie rack. The result is a soft baked bar perfect for little eaters
