Vegan Banana Bread with Tahini and Almond Flour

Ingredients

  • 2 ripe bananas + 1–2 extra if decorating the top
  • 1/2 cup tahini butter or any nut butter
  • 3 flax seeds or chia eggs or regular eggs
  • 3 tablespoons coconut nectar or agave nectar, honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cup blanched almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1/4 cup walnuts, pecans or chocolate chips
  • coconut oil spray for greasing the skillet
  • flaked sea salt for sprinkling on top

Preparation

  1. Preheat the oven to 350F.

  2. Grease the skillet with coconut oil spray.

  3. Combine all wet ingredients first, then add dry ingredients.

  4. Decorate with bananas, nuts or chocolate chips.

  5. Bake in the oven for 25-30 minutes.

  6. Sprinkle with flaked sea salt if desired.

  7. Enjoy!
