Vegan Biscotti

Ingredients

  • 2 cups almond flour
  • 1/4 cup sugar
  • 3tbsp starch (I used corn starch)
  • 1tsp baking powder
  • 1tsp vanilla extract
  • pinch of salt
  • 4tbsp cold water

Preparation

  1. Whisk together

  2. Mix into a dough. form dough into a log 10”x3” & bake for 20 min @ 350°F. let cool completely, cut into biscotti logs, flip on side & then bake again for 20 more mins (flipping halfway)

  3. I dipped the ends into chocolate (I melted 1/2 a dark chocolate bar w 1tbsp coconut oil in the microwave) + topped w crushed almonds
