Easy Vegan Almond Flour Biscotti
Ingredients
- 2 cups almond flour
- 1/4 cup sugar
- 3 tablespoons cornstarch
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- pinch of salt
- 4 tablespoons cold water
Optional toppings
- 1/2 dark chocolate bar
- 1 tablespoon coconut oil
- crushed almonds
Preparation
Whisk together the almond flour, sugar, cornstarch, baking powder, vanilla extract, and salt.
Add the cold water and mix to form a dough.
Shape the dough into a log about 10 inches long and 3 inches wide.
Bake at 350°F for 20 minutes.
Allow to cool completely.
Cut into slices, place on side, and bake again for 20 minutes, flipping halfway through.
Finishing
Melt 1/2 a dark chocolate bar with 1 tablespoon coconut oil in the microwave.
Dip the ends of the biscotti into the melted chocolate.
Sprinkle with crushed almonds.
