Vegan Creamy Potato Salad
Ingredients
Dressing
- 3 tablespoons vegan mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon nutritional yeast
- 1/4 teaspoon garlic powder
- Juice of 1/2 lemon
Salad
- 2 pounds small potatoes
- 1 cup peas
Preparation
Preheat oven to 450F.
Halve the potatoes and place them on a lined baking sheet.
Drizzle olive oil, salt, and pepper on the potatoes before placing them in the oven.
Bake for about 20 minutes or until golden brown.
While the potatoes are baking, make the dressing by adding the dressing ingredients to a mixing bowl.
Mix the dressing well.
Add the potatoes to the dressing and mix well.
Add the peas and gently mix.
