Vegan Gluten-Free Sweet Potato Pizza
Ingredients
Crust
- 3 small sweet potatoes
- 1 psyllium husk egg (1 tablespoon psyllium husk + 2.5 tablespoons water)
- 1 1/4 cups oat flour
- 1/4 cup almond flour
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon chili flakes
- 1 teaspoon dried oregano
- 2 teaspoons garlic powder
- 1/2 teaspoon sea salt
Toppings
- Roasted cherry tomatoes
- Asparagus
- Garlicky sautéed mushrooms
- 1/2 cup walnut tofu meat
- Sliced zucchini
- Vegan mozzarella
- Chili oil
Preparation
Cube and steam the sweet potatoes for 30 minutes.
Mash the steamed sweet potatoes with a fork.
Add the psyllium husk egg and remaining crust ingredients; mix to form a sticky dough.
Preheat the oven to 400°F convection.
Line a large square baking sheet with parchment paper.
Spread the dough evenly using a damp spatula.
Bake for 30 minutes.
Add the toppings.
Bake for an additional 15 minutes.
Broil for 2 minutes.
Slice and enjoy.
