Vegan Gluten-Free Sweet Potato Pizza

Ingredients

Crust

  • 3 small sweet potatoes
  • 1 psyllium husk egg (1 tablespoon psyllium husk + 2.5 tablespoons water)
  • 1 1/4 cups oat flour
  • 1/4 cup almond flour
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili flakes
  • 1 teaspoon dried oregano
  • 2 teaspoons garlic powder
  • 1/2 teaspoon sea salt

Toppings

  • Roasted cherry tomatoes
  • Asparagus
  • Garlicky sautéed mushrooms
  • 1/2 cup walnut tofu meat
  • Sliced zucchini
  • Vegan mozzarella
  • Chili oil

Preparation

  1. Cube and steam the sweet potatoes for 30 minutes.

  2. Mash the steamed sweet potatoes with a fork.

  3. Add the psyllium husk egg and remaining crust ingredients; mix to form a sticky dough.

  4. Preheat the oven to 400°F convection.

  5. Line a large square baking sheet with parchment paper.

  6. Spread the dough evenly using a damp spatula.

  7. Bake for 30 minutes.

  8. Add the toppings.

  9. Bake for an additional 15 minutes.

  10. Broil for 2 minutes.

  11. Slice and enjoy.
