Vegan Orange Almond Cake
Ingredients
- 1 1/2 cup of flour
- 1/2 cup of almond meal
- 2 tsp of baking powder
- 3/4 cup of sugar
- 1/2 cup + 3 tbsp of non-dairy milk
- 1/2 cup of fresh orange juice
- 1/3 cup of melted coconut oil
- 2 tbsp of flaxmeal
- 1 tsp of vanilla essence
- zest of 1 orange
- 1 tsp of apple cider vinegar
Preparation
Pre-heat the oven to 180c/360f and line an 8inch cake tin with a circle of baking paper at the bottom
In a bowl mix the dry ingredients together
In a separate bowl mix with a whisk the squeezed orange juice, plant milk, melted coconut oil, orange zest, apple cider vinegar and vanilla essence
Pour the liquid ingredients in the flour bowl and fold gently with a spatula until well combined
Pour in your cake tin and place in the oven to cook for 45 minutes at 180c/360f
Leave to cool on a wire rack and spread some orange marmalade on top for a simple glaze
Keep in an airtight container
