Vegan Protein-Packed Gluten-Free Mini Muffins

Ingredients

  • 1 banana (mashed)
  • 2T @bobsredmill ground flaxseed meal
  • 1/2 zucchini (grated)
  • 2/3c @bobsredmill buckwheat flour
  • 1T coconut flour
  • 1 scoop of vegan Planta banana PB protein powder from @highperformancenutrition (discount: “abv”)
  • 1/2tsp cinnamon
  • 1/2tsp baking powder
  • 1c of almond milk

Preparation

  1. Mash your banana first in the bottom of your bowl.

  2. Add ground flaxseed meal with a tablespoon of water to sit and thicken while you grate the zucchini.

  3. Grate the zucchini.

  4. Add all remaining ingredients.

  5. Place the mixture in a muffin tray with vegan chocolate chips and blueberries.

  6. Bake for 20 minutes at 350°F.

  7. Top with almond butter and maple syrup after baking.
