Vegan Protein-Packed Gluten-Free Mini Muffins
Ingredients
- 1 banana (mashed)
- 2T @bobsredmill ground flaxseed meal
- 1/2 zucchini (grated)
- 2/3c @bobsredmill buckwheat flour
- 1T coconut flour
- 1 scoop of vegan Planta banana PB protein powder from @highperformancenutrition (discount: “abv”)
- 1/2tsp cinnamon
- 1/2tsp baking powder
- 1c of almond milk
Preparation
Mash your banana first in the bottom of your bowl.
Add ground flaxseed meal with a tablespoon of water to sit and thicken while you grate the zucchini.
Grate the zucchini.
Add all remaining ingredients.
Place the mixture in a muffin tray with vegan chocolate chips and blueberries.
Bake for 20 minutes at 350°F.
Top with almond butter and maple syrup after baking.
