Vegan Spiced Gingerbread Loaf
Ingredients
- 2 tbsp coconut sugar
- 1/3 cup maple syrup
- 170g silken tofu, blended
- 1/3 cup applesauce
- 1 tsp vanilla extract
- 110g plain flour
- 110g wholemeal flour
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1 tbsp ground ginger
- pinch of salt
- 2 flax eggs
- 1 tbsp lemon juice
- 40g fresh ginger, minced
- 30g candied/dried ginger
Preparation
Preheat oven fan 180°C
Mix all the ingredients together
Bake for about 40 mins, or until a knife comes out clean
Leave to cool. once cool, ice with chocolate icing (i used 2 coconut chocolate dessert pots)
