Vegan Spiced Gingerbread Loaf

Ingredients

  • 2 tbsp coconut sugar
  • 1/3 cup maple syrup
  • 170g silken tofu, blended
  • 1/3 cup applesauce
  • 1 tsp vanilla extract
  • 110g plain flour
  • 110g wholemeal flour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1 tbsp ground ginger
  • pinch of salt
  • 2 flax eggs
  • 1 tbsp lemon juice
  • 40g fresh ginger, minced
  • 30g candied/dried ginger

Preparation

  1. Preheat oven fan 180°C

  2. Mix all the ingredients together

  3. Bake for about 40 mins, or until a knife comes out clean

  4. Leave to cool. once cool, ice with chocolate icing (i used 2 coconut chocolate dessert pots)
