Spicy Cauliflower Nourish Bowl

Ingredients

  • 2-3 cups greens (e.g., butter lettuce, arugula)
  • Kelp noodles
  • Coconut oil
  • Coconut aminos
  • Turmeric
  • Cauliflower florets
  • Apple cider vinegar
  • Hot sauce
  • Ground turmeric
  • Black pepper
  • Himalayan sea salt

Preparation

  1. Kelp noodles can be eaten raw or lightly cooked; for this recipe, toss in coconut oil, coconut aminos, and turmeric, then heat on a skillet for 2-3 minutes.

  2. For spicy cauliflower, toss cauliflower florets with 1 tablespoon coconut oil, 1 teaspoon apple cider vinegar, 1-2 teaspoons hot sauce, 2 teaspoons ground turmeric, black pepper, and Himalayan sea salt.

  3. Roast the cauliflower on a baking tray lined with parchment paper for 25-30 minutes or until browned and lightly crispy.

  4. Assemble the nourish bowl by adding 2-3 cups of greens, the prepared kelp noodles, and the spicy cauliflower in a bowl. Enjoy!
