No-Bake Brownies with Chocolate Ganache

Ingredients

  • brownie:
  • 1 cup coconut flour, sifted
  • 1/4 cup cacao
  • 1/4 tsp salt
  • 1/2 cup nut butter (used pb, sub tahini if nut free)
  • 2 tsp vanilla
  • 3-4 drops stevia (sub 1 tbs sweetener of choice)
  • 2 tbs liquid sweetener
  • 2 tbs liquified coconut oil
  • 1 cup full fat coconut milk
  • ganache:
  • 1 cup full fat coconut milk
  • 1 heaped tbs coconut oil
  • 1 bar vegan chocolate (100 gr)

Preparation

  1. Whisk dry ingredients for the brownie in a bowl (first 3), add remaining ingredients and stir/kneed to combine

  2. Dough must be firm enough to spread into a lined tin easily

  3. Allow to set in the fridge

  4. Add the ingredients for the ganache to a saucepan, keep whisking on low heat until fully combined

  5. Allow to cool to thicken up but also yummy to spread right away!

  6. Store in the fridge for up to 4 days
