Vegan Coconut and Cardamom Carrot Cake
Ingredients
- For the frosting
- • 1 cup raw macadamia nuts (soaked, drained and rinsed +1 tbsp tiger nut flour• 1/2 cup almond milk
- • 1/4 cup maple syrup
- • 2 tblsp coconut oil
- • 1 tsp vanilla
- • 2 tsp lemon juice
- • 1/2 tsp salt
- For the cake:? • 1 cup gluten-free flour • 1 cup spelt flour
- • 2 cups of organic grated carrots (washed and peeled prior to grating) • 1 tsp baking powder
- • 1 tsp bicarbonate of soda • 1/2 cup almond, macadamia or fermented milk • 1 cup of pure maple syrup • 2 tbsp coconut oil, melted
- • 3 tbsp fresh lemon juice • 1/2 cup organic sun-dried raisins (omit if these do not sit well with you) • 1/2 cup of activated & unsalted walnuts or pecans, roughly chopped
- • 2 tsp ground cardamom • Pinch of cinnamon
- • Sprinkle of fine-grain sea salt
