Vegan Coconut and Cardamom Carrot Cake

Ingredients

  • For the frosting
  • • 1 cup raw macadamia nuts (soaked, drained and rinsed +1 tbsp tiger nut flour• 1/2 cup almond milk
  • • 1/4 cup maple syrup
  • • 2 tblsp coconut oil
  • • 1 tsp vanilla
  • • 2 tsp lemon juice
  • • 1/2 tsp salt
  • For the cake:? • 1 cup gluten-free flour • 1 cup spelt flour
  • • 2 cups of organic grated carrots (washed and peeled prior to grating) • 1 tsp baking powder
  • • 1 tsp bicarbonate of soda • 1/2 cup almond, macadamia or fermented milk • 1 cup of pure maple syrup • 2 tbsp coconut oil, melted
  • • 3 tbsp fresh lemon juice • 1/2 cup organic sun-dried raisins (omit if these do not sit well with you) • 1/2 cup of activated & unsalted walnuts or pecans, roughly chopped
  • • 2 tsp ground cardamom • Pinch of cinnamon
  • • Sprinkle of fine-grain sea salt
