Ingredients

  • I enjoyed some leftover roasted beets (if you like beets and don't like cooking them, go for the pre-cooked variety in the produce section of your grocery store), roasted frozen broccoli, edamame and corn (heated in the microwave). I topped with a maple mustard sauce that I made using 1 tbsp tahini, 1 dash of maple syrup or agave, 1 tsp mustard, 1 tsp garlic powder, pinch of salt, 1-2 tbsp water. Mix the ingredients together in a small bowl and pour over top your bowl and top with cilantro
