15-Minute Black Chickpea Couscous
Ingredients
- 1 Tbsp rapeseed oil
- 1 tspn chopped garlic
- 1/2 cup chopped white onions
- 1/2 tsp turmeric powder
- 1 tsp salt or to taste
- 1 tsp paprika powder
- 1/2 cup chopped tomatoes
- 1 tin @bionaorganic black chickpeas 400g
- 1 cup fine cous-cous
- sprinkle of chopped green peppers for crunch
- coriander garnish
Preparation
Heat the rapeseed oil in a pot over medium heat.
Add chopped garlic and white onions and sauté until softened.
Stir in turmeric powder, salt, and paprika powder.
Add chopped tomatoes and black chickpeas.
Mix in fine couscous, cover, and let steam for a few minutes until tender.
Sprinkle with chopped green peppers and garnish with coriander before serving.
Notes
Black chickpeas are high in fiber and protein, with a lower glycemic index, making this a nutritious meal.
This dish is ready in about 15 minutes and is piping hot and satisfying.
