10-Minute Peanut Butter Curry
Ingredients
- 2 tbsp oil
- 2 garlic cloves (crushed)
- 1 red onion (roughly diced)
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp cayenne pepper
- Pinch of chilli flakes
- 2 cans chickpeas (400g each)
- 4 Tbsp peanut butter (crunchy or smooth)
- 1 tsp veg stock (or 1/2 cube)
- 2 tbsp tomato puree
- Juice of lime
- 1 can coconut milk
- Handful of spinach (optional)
Preparation
Heat a large pot on medium heat with oil, crushed garlic, and onion, then fry for a couple of minutes.
Add the spices, drained chickpeas, peanut butter, vegetable stock powder, tomato puree, lime juice, and coconut milk. Cook on high heat for 6-7 minutes until it thickens, stirring occasionally.
Take off the heat and add the spinach (optional), then stir until it wilts.
Notes
This curry is comforting and can be prepared in 10-15 minutes.
