3/4 Ingredient No Bake Millionaire Shortbread

Ingredients

  • 200gms ground almonds
  • 200gms almond butter (runny)
  • 2 tablespoons honey (optional, use extra almond butter if omitting honey)
  • 100gms caramel (ready-made)
  • 100gms dark chocolate

Preparation

  1. Mix 200gms ground almonds, 100gms almond butter, and honey in a bowl. Rub the ingredients together to fully combine.

  2. Press the mixture firmly into a lined loaf tin, creating a smooth surface.

  3. Spread a thin layer of caramel over the base and place it in the freezer to set.

  4. Melt the chocolate for 1 minute in a microwave, add 100gms of almond butter, and stir well to combine.

  5. Drizzle the chocolate mixture over the caramel layer, creating a separate chocolate layer.

  6. Tap the tin lightly on the worktop to smooth out the chocolate layer. Optionally, add a light dusting of sea salt crystals.

  7. Place the tin in the fridge to set.

  8. Once set, cut into 8-10 squares and enjoy!
