Almond Pea Pesto Pasta

Ingredients

  • 2 1/2 cups pasta cooked according to your package directions in salted water
  • 2 cups packed fresh spinach
  • 1 cup frozen peas, thawed
  • 1/4 cup toasted slivered almonds
  • 1/2 tsp garlic powder or to your taste
  • 3 tbsp @bertolli_us extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2-3 tbsp vegan parmesan shreds, I like using the one from @followyourheart
  • 1/4 + 1/8 tsp salt or to your taste

Preparation

  1. Add everything above in a food processor except for the cooked pasta, pulse until evenly blended and combined.

  2. Taste and season to your liking.

  3. Mix about half of the pesto with your hot pasta and mix until evenly combined, adding the rest as needed.

  4. Top with vegan parmesan shreds, toasted almonds, and peas.
