Banana Fritters
Ingredients
- 3 ripe bananas, mashed 1/2 cup buckwheat flour
- Optional extras
- 1/2 tsp ground cinnamon 1/4 cup fresh blueberries
Preparation
Mix together the mashed bananas, flour and cinnamon in a bowl, then stir through the blueberries
Drizzle some oil in a non-stick frying pan on a medium heat and gently drop a tablespoon of batter per fritter
I tend to do batches of 4 at a time
Cook the fritters for 1-2 minutes per side, until golden brown
Allow to cool on a wire rack then serve with a big dollop of natural yogurt
