Banana Fritters

Ingredients

  • 3 ripe bananas, mashed
1/2 cup buckwheat flour
  • Optional extras
  • 1/2 tsp ground cinnamon
1/4 cup fresh blueberries

Preparation

  1. Mix together the mashed bananas, flour and cinnamon in a bowl, then stir through the blueberries

  2. Drizzle some oil in a non-stick frying pan on a medium heat and gently drop a tablespoon of batter per fritter

  3. I tend to do batches of 4 at a time

  4. Cook the fritters for 1-2 minutes per side, until golden brown

  5. Allow to cool on a wire rack then serve with a big dollop of natural yogurt
