Berry Yogurt Bowl with Crunchy Cardamom Nuts
Ingredients
- soy yogurt
- 1/2 teaspoon beetroot powder
- frozen berries
- tahini or favorite nut butter
- a handful of mixed nuts and seeds (almonds, peanuts, walnuts, pumpkin seeds, sunflower seeds)
- a pinch of cardamom
- a spoonful of maple syrup
- sea salt
Preparation
Mix soy yogurt with 1/2 teaspoon beetroot powder.
Top with frozen berries, crunchy nuts, and a drizzle of tahini or nut butter.
Crunchy nuts
Toast a handful of mixed nuts and seeds (almonds, peanuts, walnuts, pumpkin seeds, sunflower seeds) in a pan for a minute.
Add a pinch of cardamom and mix well.
Turn off the heat and add a spoonful of maple syrup, making sure everything is well coated.
Pour onto parchment paper and sprinkle with sea salt.
Leave for about 10-15 minutes to get crunchy.
