Berry Yogurt Bowl with Crunchy Cardamom Nuts

Ingredients

  • soy yogurt
  • 1/2 teaspoon beetroot powder
  • frozen berries
  • tahini or favorite nut butter
  • a handful of mixed nuts and seeds (almonds, peanuts, walnuts, pumpkin seeds, sunflower seeds)
  • a pinch of cardamom
  • a spoonful of maple syrup
  • sea salt

Preparation

  1. Mix soy yogurt with 1/2 teaspoon beetroot powder.

  2. Top with frozen berries, crunchy nuts, and a drizzle of tahini or nut butter.

Crunchy nuts

  1. Toast a handful of mixed nuts and seeds (almonds, peanuts, walnuts, pumpkin seeds, sunflower seeds) in a pan for a minute.

  2. Add a pinch of cardamom and mix well.

  3. Turn off the heat and add a spoonful of maple syrup, making sure everything is well coated.

  4. Pour onto parchment paper and sprinkle with sea salt.

  5. Leave for about 10-15 minutes to get crunchy.
