Breakfast Hash with Heinz Beans Grilled Tomatoes and My First Avocado Rose

Ingredients

  • 1 ube peeled & diced
  • 1/2 yellow bell pepper diced
  • 1 carrot chopped
  • 1 tsp chopped garlic >1 tomato (grilled/ panseared)
  • heinz beans >avocado >cuban oregano >salt & pepper

Preparation

  1. Heat up a sauté pan with a little vegetable oil to med/high heat

  2. Add the diced ube and sauté for a few mins

  3. The smaller the dice the faster it’ll cook up

  4. Add the bell peppers and carrots

  5. Season with a dash of s&p

  6. And cook for about 5-8 mins

  7. Once everything’s a bit browned add the chopped garlic and chopped cuban oregano ( other oreganos work too but that’s what i used

  8. While this is cooking up i heat up the beans in a microwave or small sauce pot with salt & pepper

  9. After the potato hash is cooked transfer to a plate

  10. Use the same sauté pan and turn the heat to a high

  11. Season the tomato with salt pepper and a dash of thyme

  12. Cook it in the hot pan for literally a min on each side to add the char marks and boom
