Breakfast Hash with Heinz Beans Grilled Tomatoes and My First Avocado Rose
Ingredients
- 1 ube peeled & diced
- 1/2 yellow bell pepper diced
- 1 carrot chopped
- 1 tsp chopped garlic >1 tomato (grilled/ panseared)
- heinz beans >avocado >cuban oregano >salt & pepper
Preparation
Heat up a sauté pan with a little vegetable oil to med/high heat
Add the diced ube and sauté for a few mins
The smaller the dice the faster it’ll cook up
Add the bell peppers and carrots
Season with a dash of s&p
And cook for about 5-8 mins
Once everything’s a bit browned add the chopped garlic and chopped cuban oregano ( other oreganos work too but that’s what i used
While this is cooking up i heat up the beans in a microwave or small sauce pot with salt & pepper
After the potato hash is cooked transfer to a plate
Use the same sauté pan and turn the heat to a high
Season the tomato with salt pepper and a dash of thyme
Cook it in the hot pan for literally a min on each side to add the char marks and boom
