Chickpea Cookie Dough Balls
Ingredients
- 1 can chickpeas
- 1/3 cup almond flour
- 1/3 cup maple syrup
- 1/2 cup peanut butter
- 2 tablespoons vanilla protein powder
- 2 teaspoons vanilla extract
- Sprinkle of cinnamon
- 1/2 cup chocolate buttons
Preparation
Drain and rinse the chickpeas.
Steam the chickpeas for 5 minutes and then shell them to remove skins.
Blend the chickpeas into a paste in a blender.
Add almond flour, maple syrup, peanut butter, vanilla protein powder, vanilla extract, and cinnamon, and blend until well combined.
Add chocolate buttons and give the mixture a quick blitz to incorporate.
Roll the mixture into small balls.
Store the balls in the refrigerator.
