Chickpea Cookie Dough Balls

Ingredients

  • 1 can chickpeas
  • 1/3 cup almond flour
  • 1/3 cup maple syrup
  • 1/2 cup peanut butter
  • 2 tablespoons vanilla protein powder
  • 2 teaspoons vanilla extract
  • Sprinkle of cinnamon
  • 1/2 cup chocolate buttons

Preparation

  1. Drain and rinse the chickpeas.

  2. Steam the chickpeas for 5 minutes and then shell them to remove skins.

  3. Blend the chickpeas into a paste in a blender.

  4. Add almond flour, maple syrup, peanut butter, vanilla protein powder, vanilla extract, and cinnamon, and blend until well combined.

  5. Add chocolate buttons and give the mixture a quick blitz to incorporate.

  6. Roll the mixture into small balls.

  7. Store the balls in the refrigerator.
