Chipotle Pulled Jackfruit Tacos

Ingredients

  • 1 tbsp olive oil
  • 2 onions
  • 1/2 tbsp brown sugar
  • 5 garlic cloves
  • 3 cans jackfruit, core removed
  • 200g chipotle sauce
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 4 tbsp tomato paste
  • 2 tbsp tamari
  • salt and pepper to taste
  • 1 tbsp apple cider vinegar

Preparation

  1. In a large pan, heat up the oil. Add the onion, garlic and brown sugar and fry for 3-4 minutes.

  2. Add all your spices. Fry, stirring often for about 2 minutes.

  3. Mix in the jackfruit, trying to break down each piece with a wooden spoon.

  4. Incorporate the tamari, vinegar, tomato paste and chipotle.

  5. Cook for 15-20 minutes on low heat, stirring occasionally.

Serving suggestions

  1. Serve in corn tortillas with shredded cabbage, corn, jalapenos, coconut yoghurt, avocado, spring onions, and fresh lime.
