Chipotle Pulled Jackfruit Tacos
Ingredients
- 1 tbsp olive oil
- 2 onions
- 1/2 tbsp brown sugar
- 5 garlic cloves
- 3 cans jackfruit, core removed
- 200g chipotle sauce
- 1 tbsp ground cumin
- 1 tbsp paprika
- 4 tbsp tomato paste
- 2 tbsp tamari
- salt and pepper to taste
- 1 tbsp apple cider vinegar
Preparation
In a large pan, heat up the oil. Add the onion, garlic and brown sugar and fry for 3-4 minutes.
Add all your spices. Fry, stirring often for about 2 minutes.
Mix in the jackfruit, trying to break down each piece with a wooden spoon.
Incorporate the tamari, vinegar, tomato paste and chipotle.
Cook for 15-20 minutes on low heat, stirring occasionally.
Serving suggestions
Serve in corn tortillas with shredded cabbage, corn, jalapenos, coconut yoghurt, avocado, spring onions, and fresh lime.
