Chocolate Filled Pancakes

Ingredients

  • 150g rolled oats, ground into a fine flour
  • 1 tbsp maple syrup, add to taste
  • 2 heaped tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 220ml unsweetened almond milk
  • 1 tbsp apple cider vinegar
  • 4 pieces dark chocolate
  • toppings: dark chocolate shavings

Preparation

  1. Whisk all the ingredients except together

  2. Don’t let the batter sit for too long as it will get too thick

  3. Heat a non-stick frying pan on a low-medium heat

  4. Grease the base of the pan with one cal spray or a little coconut oil and lightly grease 4 ring moulds if using

  5. Pour some batter into the ring moulds until halfway up the mould

  6. You can free pour if you don’t have moulds

  7. Place one piece of chocolate in the middle and cover with some more batter

  8. Cover the pan with a fitting lid and let the pancakes cook for 10-12 minutes

  9. When the tops of the pancakes are no longer wet, remove the ring mould and flip them over

  10. Let them cook for another 2-3 minutes

  11. Top with dark chocolate shavings and serve warm

  12. Enjoy!
