Coconut MCT Energy Bites with Chocolate Coating

Ingredients

  • 2 cups desiccated coconut
  • 2 scoops Nutiva's organic MCT powder
  • 1/4 teaspoon salt
  • 2 tablespoons coconut cream
  • 3 tablespoons agave or maple syrup
  • 1 teaspoon vanilla paste
  • 3 tablespoons coconut oil
  • 150 grams medium-dark chocolate
  • 2 teaspoons desiccated coconut for sprinkling

Preparation

  1. Place the desiccated coconut, MCT powder and salt in a food processor and blend for 5 seconds to combine.

  2. Add in the coconut cream, maple syrup, vanilla and coconut oil. Process until combined.

  3. Roll the mixture into small balls and place on a parchment-lined sheet in the freezer for 10 minutes to solidify.

  4. Melt the chocolate in a bain-marie.

  5. Dip the balls into the chocolate one at a time, letting excess chocolate run off, then place on a plate and sprinkle coconut on top.

  6. Place in the fridge for 10 minutes for the chocolate to harden.

  7. Enjoy!
