Creamy Tomato Hemp Pasta
Ingredients
- -1 large onion, diced
- -3 cloves garlic, minced
- -1/2 tsp dried oregano
- -1 tsp dried basil
- -1 tsp Italian herbs, or to taste
- -1 14-oz can diced tomatoes (or 600g fresh tomatoes), pureed in a blender
- -1 1/2 cups (360ml) water
- -8 oz (227g) dry pasta
- for the hemp parmesan
- -1/3 cup (50g) hemp seeds
- -3 tbsp (20g) nutritional yeast
- -1/2 tsp each: garlic powder, onion powder, red pepper flakes, salt, pepper
Preparation
In a large pot, heat some oil/water and saute the onion and garlic for 5 minutes. Add in herbs and stir well. Once fragrant, stir in tomatoes, water, and pasta. Bring to a simmer and cover the pot. Cook for 10-15 minutes, or until the pasta is cooked to your desired texture. Stir occasionally to prevent sticking
While the pasta is cooking, blend all the hemp parmesan ingredients in a food processor into a sand-like mixture. Once the pasta is cooked through, stir the mixture into the pasta and serve warm
Instant Pot version: follow all the above steps, but cook for 6-7 minutes on manual mode. Do a quick pressure release, stir in the hemp parmesan, and serve
