Creamy Tomato Hemp Pasta

Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp Italian herbs, or to taste
  • 1 14-oz can diced tomatoes (or 600g fresh tomatoes), pureed in a blender
  • 1 1/2 cups (360ml) water
  • 8 oz (227g) dry pasta

Hemp parmesan

  • 1/3 cup (50g) hemp seeds
  • 3 tbsp (20g) nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

  1. In a large pot, heat some oil or water and saute the onion and garlic for 5 minutes.

  2. Add in herbs and stir well.

  3. Once fragrant, stir in tomatoes, water, and pasta.

  4. Bring to a simmer and cover the pot.

  5. Cook for 10-15 minutes, or until the pasta is cooked to your desired texture. Stir occasionally to prevent sticking.

  6. While the pasta is cooking, blend all the hemp parmesan ingredients in a food processor into a sand-like mixture.

  7. Once the pasta is cooked through, stir the mixture into the pasta and serve warm.

Instant pot method

  1. Follow all the above steps, but cook for 6-7 minutes on manual mode.

  2. Do a quick pressure release, stir in the hemp parmesan, and serve.
