Delicious Vegan Millionaire Shortbread Bars

Ingredients

Base

  • 2 1/2 cup (310g) plain or all-purpose flour
  • 3/4 cup (170g) vegan butter
  • 1/4 cup (50g) sugar
  • Pinch of any good quality salt, if using unsalted butter or oil
  • Dash of chilled water

Caramel filling

  • ~2 cans (640g) sweetened condensed coconut milk
  • 1 1/4 cup (280g) vegan butter
  • 1/2 cup (100g) coconut sugar

Chocolate topping

  • 1 cup (220g) vegan chocolate, chopped
  • 2 tbsp (30g) vegan butter

Preparation

  1. Preheat your oven to the required temperature for baking the base.

  2. Mix the base ingredients together until a dough forms, then press into a lined baking tray.

  3. Bake the base until golden, then let it cool.

  4. For the caramel filling, combine the sweetened condensed coconut milk, vegan butter, and coconut sugar in a pan over medium heat. Stir continuously until the mixture thickens.

  5. Pour the caramel over the cooled base and spread evenly. Allow to set.

  6. Melt the vegan chocolate and vegan butter together, then pour over the set caramel layer.

  7. Let the chocolate set before cutting into bars.
