Easy 15-Minute Tofu Stir Fry
Ingredients
- 1 tsp coconut oil
- 1 tsp ginger paste
- 1 tsp lemongrass paste (optional)
- 200g firm tofu
- 80g mushrooms, chunky chopped
- handful of broccoli
- handful of cherry tomatoes
- 1 tbsp soy sauce
- 2 tsp rice vinegar (or apple)
- 1 tbsp agave nectar (or maple/golden)
- 1/2 tsp cinnamon
- salt and pepper
- 1 portion of pre-cooked rice
- fresh coriander (optional)
- chia seeds (optional)
Preparation
Add the oil, ginger and lemongrass to the pan, fry the tofu, mushrooms and broccoli for a few minutes.
Then add the soy sauce, rice vinegar, agave nectar, cinnamon, salt and pepper, and cherry tomatoes.
Stir fry for 5-8 minutes.
Add the rice for the last few minutes.
Serve and sprinkle with fresh coriander and chia seeds if desired.
