Easy 15-Minute Tofu Stir Fry

Ingredients

  • 1 tsp coconut oil
  • 1 tsp ginger paste
  • 1 tsp lemongrass paste (optional)
  • 200g firm tofu
  • 80g mushrooms, chunky chopped
  • handful of broccoli
  • handful of cherry tomatoes
  • 1 tbsp soy sauce
  • 2 tsp rice vinegar (or apple)
  • 1 tbsp agave nectar (or maple/golden)
  • 1/2 tsp cinnamon
  • salt and pepper
  • 1 portion of pre-cooked rice
  • fresh coriander (optional)
  • chia seeds (optional)

Preparation

  1. Add the oil, ginger and lemongrass to the pan, fry the tofu, mushrooms and broccoli for a few minutes.

  2. Then add the soy sauce, rice vinegar, agave nectar, cinnamon, salt and pepper, and cherry tomatoes.

  3. Stir fry for 5-8 minutes.

  4. Add the rice for the last few minutes.

  5. Serve and sprinkle with fresh coriander and chia seeds if desired.
