Easy Cheesy Spinach and Tomato Gnocchi

Ingredients

  • thawed Trader Joe's cauliflower gnocchi (one batch per bag)
  • 2 cups Rao's Homemade original tomato sauce
  • 1/4 teaspoon onion powder
  • 1 tablespoon semi-fried chives (optional)
  • 1.5 cups frozen chopped spinach
  • 1 packed cup shredded mozzarella (optional, or substitute dairy-free)

Preparation

  1. Add thawed cauliflower gnocchi to an air fryer at 390°F for 13 minutes, spread in an even layer.

  2. While the gnocchi is cooking, combine in a large saucepan: 2 cups Rao's Homemade original tomato sauce, 1/4 teaspoon onion powder, 1 tablespoon semi-fried chives (optional), 1.5 cups frozen chopped spinach, and 1 packed cup shredded mozzarella (optional).

  3. Heat the mixture on medium-low, stirring until the cheese is melted and the spinach is warmed through.

  4. Add the cooked gnocchi to the saucepan and stir to coat.

  5. Serve and enjoy.
