Easy Chickpea Curry with Coconut Milk
Ingredients
- 1 can chickpeas
- half a can coconut milk
- boiled sweet potatoes
- baked veggies
- onions
- garlic
- tomatoes
- cumin seeds
- spices
- a little oil
Preparation
Heat oil in a pan
Add cumin seeds and cook until fragrant
Add chopped onions and garlic, sauté until golden
Add chopped tomatoes and cook until soft
Add spices and stir well
Add chickpeas, sweet potatoes, and baked veggies
Pour in coconut milk and simmer for 10-15 minutes until flavors combine
