Easy Vegan Mushroom Soup

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 1 large clove garlic minced
  • 1 1/2 pounds mixed cremini/shiitake
  • 2 tbsp tamari
  • 1/2 tsp cumin
  • 1 tsp oregano
  • 2 tsp dried basil
  • 3 cups veggie broth
  • 1 can full fat coconut milk
  • 1 tsp cornstarch
  • Sea salt and tons of cracked pepper

Preparation

  1. Sweat onions and garlic, toss in all spices and toast.

  2. Add in mushrooms, stir and cover for 10 min.

  3. Stir cornstarch with two tbsp broth to create slurry.

  4. Add in broth and bring to a boil.

  5. Remove from heat and blend.

  6. Add coconut milk at the end of the blend cycle.

  7. Test for seasoning.
