Easy Vegan Pancakes

  • step 3: at this point you can mix in the grated apple and the vanilla paste (this is optional)

Preparation

  1. Step1: firstly, mash 1 banana with a fork in a mixing bowl then add 1 cup of flour and mix together

  2. Step 2: then slowly add the 1 cup of plant-based milk while you stir (this will make a batter consistency)

  3. Step 3: at this point you can mix in the grated apple and the vanilla paste (this is optional)

  4. Step 4: heat up a non stick pan on a medium heat with a tbsp of plant-based butter, carefully tilting the pan to spread the butter evenly (once the butter has melted any excess can be poured in the batter and mixed)

  5. Step 5: add a few ladles of batter to the pan, leaving space between each one so they have room to spread

  6. Step 6: cook for 1-2 minutes until little bubbles appear on the surface and the bases of each pancakes are golden - then carefully flip them over

  7. Step 7: once the pancakes are golden on both sides let them rest on a plate (keep covered with foil to stay warm) while the you cook the other pancakes

  8. Step 8: repeat with the remaining batter - add some more butter in between batches if the pan starts to dry

  9. Step 9: tower up the pancakes on your plate, drizzle over some maple syrup, chopped nuts and fresh fruit ? ? (add some plant based yoghurt such as coconut for a fresh touch)

  10. Step 10: enjoy!
