Falafels
Ingredients
- 1 can of chickpeas rinsed and drained
- 1 small grated zucchini
- 1 small grated carrot
- 2 crushed garlic cloves
- 2 tablespoons of flour
- 1 tablespoon of lemon
- 2 tablespoons of parsley
- 1 tablespoon of olive oil
- 1/4 cup wholemeal breadcrumbs
- 1 red onion diced
- 1/2 cup of mushrooms
- 1 1/2 teaspoons of salt
- pepper
- sunflower oil for frying

Preparation
In a fry pan add the oil, zucchini, carrots, onions, crushed garlic, mushrooms, 1/2 teaspoon salt and pepper
Sauté for 10 minutes
Set aside to cool
In a blender add the chickpeas, 1 teaspoon of salt, pepper, parsley, breadcrumb, flour, lemon juice and vegetable mixture
Pulse but not too smooth
Cover and place the mixture in the fridge for 30 minutes
Roll falafels and fry
