Baked Vegetable Pakora Fritters

Ingredients

  • 2 cups chickpea flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp garam masala
  • 1.5 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1 medium sweet potato
  • 1 zucchini
  • 1 small onion, finely chopped
  • 1/2 cup frozen peas
  • 1/2 cup chopped red pepper
  • About 1 1/4 cups water

Preparation

  1. Preheat oven to 250°C

  2. In a large bowl, mix together the dry ingredients and add about 1 1/4 cups of water

  3. Grate all the vegetables, including the skin, and add them to the batter

  4. Using a tablespoon, scoop the battered vegetables and drop them onto a well-oiled baking sheet

  5. Bake for 8-9 minutes, then flip and bake for another 10 minutes, until golden brown
