Baked Vegetable Pakora Fritters
Ingredients
- 2 cups chickpea flour
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp garam masala
- 1.5 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1 medium sweet potato
- 1 zucchini
- 1 small onion, finely chopped
- 1/2 cup frozen peas
- 1/2 cup chopped red pepper
- About 1 1/4 cups water
Preparation
Preheat oven to 250°C
In a large bowl, mix together the dry ingredients and add about 1 1/4 cups of water
Grate all the vegetables, including the skin, and add them to the batter
Using a tablespoon, scoop the battered vegetables and drop them onto a well-oiled baking sheet
Bake for 8-9 minutes, then flip and bake for another 10 minutes, until golden brown
