Fully Raw Organic Vegetable Salad

Ingredients

  • Soft lettuce leaves
  • Tri-coloured sweet cherry tomatoes
  • Cucumbers
  • Red bell pepper
  • Greek olives with lots of herbs
  • Raw, sundried tomatoes
  • A clove of garlic
  • Fresh basil
  • Avocado
  • Living fresh cress sprouts

Dressing

  • Clean mustard
  • Fennel
  • Turmeric
  • Cayenne pepper
  • Maple syrup
  • Fresh lemon juice

Preparation

  1. Wash all vegetables and greens thoroughly

  2. Chop the lettuce, cucumbers, bell pepper, garlic, and basil into bite-sized pieces

  3. Slice the cherry tomatoes, avocado, and sundried tomatoes

  4. Prepare the dressing by combining clean mustard, fennel, turmeric, cayenne pepper, maple syrup, and fresh lemon juice in a small bowl

  5. Combine all chopped salad ingredients in a large mixing bowl

  6. Drizzle the prepared dressing over the salad and toss gently to mix

  7. Add the Greek olives and cress sprouts, then stir to incorporate evenly
