Lazy Vegetable Noodle Stir-Fry
Ingredients
- 4 servings rice noodles
- 2 tbsp sesame oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 cups shiitake mushrooms, chopped
- 1 large carrot, chopped
- 1 large red pepper, de-seeded and chopped
- 1/4 cup soy sauce
- 1/4 cup water
- 1 tbsp maple syrup
- 1 tbsp sriracha
- Juice of 1 lime
- 3 tbsp sesame seeds
- 2 tbsp cornstarch
Preparation
Cook the noodles according to instructions on packaging.
Heat the sesame oil in a skillet over medium heat.
Add the onion and garlic and cook until softened.
Add the shiitake mushrooms, carrots and peppers, and cook for a few minutes more.
Add the soy sauce, water, maple syrup, sriracha, lime juice and sesame seeds.
Bring to a light simmer.
Add the noodles and cornstarch.
Mix together, and when the sauce thickens serve with garnishes of your choice.
