Lazy Vegetable Noodle Stir-Fry

Ingredients

  • 4 servings rice noodles
  • 2 tbsp sesame oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 cups shiitake mushrooms, chopped
  • 1 large carrot, chopped
  • 1 large red pepper, de-seeded and chopped
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tbsp maple syrup
  • 1 tbsp sriracha
  • Juice of 1 lime
  • 3 tbsp sesame seeds
  • 2 tbsp cornstarch

Preparation

  1. Cook the noodles according to instructions on packaging.

  2. Heat the sesame oil in a skillet over medium heat.

  3. Add the onion and garlic and cook until softened.

  4. Add the shiitake mushrooms, carrots and peppers, and cook for a few minutes more.

  5. Add the soy sauce, water, maple syrup, sriracha, lime juice and sesame seeds.

  6. Bring to a light simmer.

  7. Add the noodles and cornstarch.

  8. Mix together, and when the sauce thickens serve with garnishes of your choice.
