Mango Tempeh with Avocado Rice Bowl

Ingredients

  • 1 mango
  • 2 packages tempeh
  • 1 big yellow onion
  • 3 cloves garlic
  • Salt and pepper

Sauce

  • 3 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 2 tsp brown sugar
  • 1 tbsp lime juice
  • 1/2 tsp dark soy sauce (optional)
  • 4 tbsp water
  • 1 tbsp arrowroot powder

Preparation

  1. Mix well all the sauce ingredients and set aside.

  2. Heat oil in a pan, add garlic and sauté until fragrant, then add onions and cook until translucent.

  3. Add tempeh and mango, stir for another 2 minutes.

  4. Add the sauce mixture and cook until thickened.

  5. Season with salt and pepper.

  6. Remove from heat and serve with rice and topped with your favourite veggies.
