Thai Basil Fried Rice
Ingredients
- 1 cup Lotusfoods Organic Jasmine Rice (yields 3 cups cooked)
- 4oz firm tofu
- 1/4 cup onion
- 2 cloves garlic
- 1/2 cup red bell pepper
- 2 tablespoons bamboo shoots
- 2 Thai chilies
- 1 cup Thai basil leaves
- Oil for cooking
- Salt to taste
Sauce
- 2 tablespoons mushrooms stir fry sauce
- 1 tablespoon vegan fish sauce
- 1/2 teaspoon dark soy sauce
- 1/2 teaspoon salt
Garnishes
- Cucumber slices
- Tomato slices
- Lime wedges
- Vegan fish sauce (for side)
Preparation
Let cooked rice cool overnight or in a fridge for at least 30 minutes, then fluff with a fork to loosen up the grains.
In a heated non-stick pan with 1 tablespoon oil, sauté onion until it turns translucent. Then, add in garlic and sauté until fragrant.
Add red bell pepper, bamboo shoot, tofu, rice and sauce. Cook by stirring continuously until all rice is coated with sauce. Season accordingly.
Finally, add in the Thai chilies and turn off the heat. Then, quickly fold in Thai basil leaves and give it a good stir until all ingredients are well incorporated.
Serve warm with a squeeze of lime juice and the garnishes.
