Thai Pineapple Fried Rice
Ingredients
- 2 cups cooked Jasmine rice
- 1/2 cup dry roasted cashews
- 1/2 cup fresh pineapple chunks
- 1/2 cup pan fried tofu
- 1/2 cup broccoli stems
- 1 small carrot, diced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon sliced jalapeño
- oil
- salt
Sauce
- 1.5 tablespoons vegan fish sauce
- 1.5 tablespoons soy sauce or liquid aminos
Preparation
Mix together 1.5 tablespoons vegan fish sauce and 1.5 tablespoons soy sauce or liquid aminos to make the sauce.
In a heated non-stick pan with 2 teaspoons oil, sauté onion, garlic, and carrot until soft.
Add broccoli stems, tofu, rice, and the sauce, then stir continuously until all rice is well coated with sauce.
Add cashews, pineapple, jalapeño, and season with salt to taste.
Serve warm with some Thai basil.
Tips
When cooking rice, use a little less water than requested for fluffier results.
Let the rice cool down before using; overnight rice works well for this purpose.
