Vegan Thai Pineapple Fried Rice

Ingredients

  • 2 cups cooked Jasmine rice
  • 1/2 cup dry roasted cashews
  • 1/2 cup fresh pineapple chunks
  • 1/2 cup pan-fried tofu
  • 1/2 cup broccoli stems
  • 1 small carrot, diced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon sliced jalapeño
  • oil, to taste
  • salt, to taste

Sauce

  • 1.5 tablespoons 'fish' sauce
  • 1.5 tablespoons soy sauce or liquid aminos

Preparation

  1. Mix the 'fish' sauce and soy sauce in a small bowl

  2. Heat 2 teaspoons oil in a non-stick pan over medium heat, then sauté onion, garlic, and carrot until soft

  3. Add broccoli stems, tofu, rice, and sauce, stirring continuously until rice is well coated

  4. Stir in cashews, pineapple, and jalapeño, then season with salt to taste

  5. Serve warm with Thai basil

Tips

  1. Use slightly less water than package directions when cooking rice

  2. Allow rice to cool completely before using, or use day-old rice
