Thai Pineapple Fried Rice
Ingredients
- 2 cups cooked Jasmine rice
- 1/2 cup dry roasted cashews
- 1/2 cup fresh pineapple chunks
- 1/2 cup pan fried tofu
- 1/2 cup broccoli stems
- 1 small carrot, diced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon sliced jalapeño
- Oil, as needed
- Salt, to taste
Sauce
- 1.5 tablespoons vegan fish sauce
- 1.5 tablespoons soy sauce or liquid aminos
Preparation
Mix together the sauce ingredients.
In a heated non-stick pan with 2 teaspoons oil, sauté onion, garlic, and carrot until soft.
Add broccoli stems, tofu, rice, and the sauce then stir continuously until the rice is well coated with sauce.
Add cashews, pineapple, jalapeño, and season well with salt.
Serve warm with Thai basil.
Tips
When cooking rice, use a little less water than recommended for fluffier results.
Allow the rice to cool down before using it in the recipe.
