Rice Paper Veggie Rolls

Ingredients

  • 6 rice paper sheets
  • 1/4 cup onion, chopped
  • 1 cup mixed veggies (capsicum, carrot, cabbage, spring onion)
  • 1 tsp ginger, grated
  • 1 tsp garlic, chopped
  • 1/2 tbsp soy sauce
  • 1 tsp pepper powder
  • Salt to taste
  • 1 tbsp oil

Preparation

  1. Heat oil and sauté onion, then add veggies, ginger, and garlic. Stir-fry with soy sauce, pepper, and salt.

  2. Dip each rice paper in water briefly until soft.

  3. Place stuffing on rice paper, fold sides, and roll tightly.

  4. Heat oil and pan roast the rolls until crispy on all sides.

  5. Serve hot with dipping sauce.
