Spicy Thai Basil Fried Rice

Ingredients

  • 4 cups cooked basmati rice
  • 1 small onion, sliced
  • 1 cup packed Thai basil
  • 1/4 cup baby corn
  • 1/4 cup bamboo shoot
  • 1/4 cup chopped red bell pepper
  • 2 Thai chilis, seeds removed
  • 8oz pan-fried tofu
  • blanched baby broccoli
  • oil

Sauce

  • 1 tablespoon 'fish' sauce (see recipe on highlights)
  • 1 tablespoon soy sauce or tamari
  • 1/2 teaspoon salt (adjust accordingly)

Preparation

  1. In a heated non-stick pan with 2 teaspoons oil, sauté onion until it turns translucent. Then, stir in baby corn, bamboo shoot, chilis, bell pepper, Thai basil and cook for 2 minutes, season with a pinch of salt.

  2. Add in rice, tofu, broccoli and sauce while stirring continuously until all rice is well coated. Season accordingly to your preference. (Alternatively, add Thai basil last if you prefer a stronger aroma.)

Tips

  1. Basmati or Jasmine rice is recommended. If using short-grain rice, cook with a little less water than needed.

  2. Fluff rice with a fork to loosen up before adding to the pan.
