Spicy Thai Basil Fried Rice
Ingredients
- 4 cups cooked rice (basmati)
- 1 small onion, sliced
- 1 cup packed Thai basil
- 1/4 cup baby corn
- 1/4 cup bamboo shoot
- 1/4 cup chopped red bell pepper
- 2 Thai chilis, seeds removed
- 8 oz pan-fried tofu
- blanched baby broccoli
- oil
Sauce
- 1 tablespoon 'fish' sauce
- 1 tablespoon soy sauce or tamari
- 1/2 teaspoon salt
Preparation
In a heated non-stick pan with 2 teaspoons oil, sauté onion until it turns translucent.
Stir in baby corn, bamboo shoot, chilis, bell pepper, Thai basil and cook for 2 minutes, season with a pinch of salt.
Add rice, tofu, broccoli and sauce while stirring continuously until all rice is well coated. Season accordingly to preference.
