Spicy Thai Basil Fried Rice

Ingredients

  • 4 cups cooked rice (basmati)
  • 1 small onion, sliced
  • 1 cup packed Thai basil
  • 1/4 cup baby corn
  • 1/4 cup bamboo shoot
  • 1/4 cup chopped red bell pepper
  • 2 Thai chilis, seeds removed
  • 8 oz pan-fried tofu
  • blanched baby broccoli
  • oil

Sauce

  • 1 tablespoon 'fish' sauce
  • 1 tablespoon soy sauce or tamari
  • 1/2 teaspoon salt

Preparation

  1. In a heated non-stick pan with 2 teaspoons oil, sauté onion until it turns translucent.

  2. Stir in baby corn, bamboo shoot, chilis, bell pepper, Thai basil and cook for 2 minutes, season with a pinch of salt.

  3. Add rice, tofu, broccoli and sauce while stirring continuously until all rice is well coated. Season accordingly to preference.
