Protein Pancakes with Nutella Disks

Ingredients

  • 3 Eggs
  • 1/4 Cup almond milk
  • 1 Scoop vanilla Petite Protein
  • 1/2 Cup noshu sugar free Pancake Mix

Nutella disks

  • 3 teaspoons Nutella

Toppings

  • 10g Queens sugar free maple syrup
  • 1/2 banana
  • 1/4 mixed berries
  • 30g Bulla reduced fat vanilla ice cream

Preparation

  1. Line a baking tray with baking paper.

  2. Dollop 1 teaspoon of Nutella onto the baking tray and spread into a disc. Repeat to make 3 discs.

  3. Place the tray in the freezer for 1 hour.

  4. Keep the Nutella discs in the freezer until required as they soften quickly.

  5. In a bowl, mix 3 egg yolks (set aside the egg whites), almond milk, protein powder, and pancake mix.

  6. Using a whisk or hand mixer, beat the egg whites until stiff peaks form.

  7. Add the beaten egg whites to the yolk mixture and lightly fold them together.

  8. Spoon some mixture into the pan and place a Nutella disc on top. Then top with more pancake mixture.

  9. Cook until golden on both sides, then repeat for the remaining two pancakes.

  10. Heat a non-stick skillet over medium heat before cooking the pancakes
