One Pot Creamy Vegan Pasta and Sausage
Ingredients
- 4 links Italian vegan sausage (1 lb), chopped into 1/4-inch slices
- 1 medium yellow onion, chopped
- 2 tsp oregano
- 1/2 tsp fennel seeds
- 1/2 tsp smoked paprika
- 1/4 tsp crushed red pepper
- 2 tbsp tomato paste
- 4 garlic cloves, minced
- 24 oz tomato purée
- 3 cups vegetable broth
- 16 oz small-shaped pasta
- 1/4 cup vegan cream cheese
- non-dairy milk
- fresh herbs
Preparation
In a large non-stick pan or cast iron, brown sausage according to package directions.
Add onion and sauté on medium to medium-high heat until golden, about 7-9 minutes.
Add spices, tomato paste, and garlic; mix well for 1-2 minutes until fragrant and incorporated.
Add broth, purée, 1 cup water, and pasta. Ensure the liquid covers the pasta (add more water if necessary). Bring to a rapid boil, then simmer, stirring occasionally with the lid partially covered, until the pasta is al dente.
Turn off the heat, add cream cheese, and mix until incorporated. If the sauce is too thick, add a splash of non-dairy milk.
Serve topped with fresh herbs and vegan parmesan. Enjoy!
