Fluffy Almond Flour Pancakes with Fresh Berries

Ingredients

  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/4 teaspoon salt
  • 1 cup almond milk
  • 2 tablespoons olive oil or melted coconut oil
  • 2 tablespoons maple syrup or sugar of choice
  • 1 tsp pure vanilla extract
  • Additional oil for pan

Preparation

  1. Combine all ingredients together.

  2. Scoop the batter onto a warm skillet and add blueberries and strawberries.

  3. Cook for 2 to 3 minutes until small bubbles form.

  4. Carefully flip and cook for another 1-2 minutes.

  5. Top with butter and warm maple syrup. Enjoy!
