Fluffy Almond Flour Pancakes with Fresh Berries
Ingredients
- 1 cup almond flour
- 1 tsp baking powder
- 1/4 teaspoon salt
- 1 cup almond milk
- 2 tablespoons olive oil or melted coconut oil
- 2 tablespoons maple syrup or sugar of choice
- 1 tsp pure vanilla extract
- Additional oil for pan
Preparation
Combine all ingredients together.
Scoop the batter onto a warm skillet and add blueberries and strawberries.
Cook for 2 to 3 minutes until small bubbles form.
Carefully flip and cook for another 1-2 minutes.
Top with butter and warm maple syrup. Enjoy!
